RECIPE: Loaded Vegan Banana Bread

Hey babes here is our recipe for loaded vegan banana bread! It's packed with all kinds of rad vegan ingredients. If you decide to try out this recipe tag us in a photo & please let us know in the comments. 

INGREDIENTS

  • 3 Hella ripe bananas
  • 3/4 cup brown sugar
  • 1/2 cup oil of choice (we used vegetable oil for this recipe, and also feel that coconut oil work great)
  • 1tsp vanilla extract (If you can find Mexican vanilla that would work best)
  • 3/4 cup plain flour
  • 3/4 cup wheat flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp cinnamon powder
  • 1/4 tsp nutmeg powder
  • pinch of salt
  • 1/2 cup of nuts of choice (we used a blend of pecans and walnuts) 
  • 1/4 cup cacao nibs ( to give it a slight chocolate taste)
  • 3/4 cup fresh or frozen blueberries (Frozen ones seems to hold their shape better)
  • small amount of chia seeds maybe 1/2 tsp

*The nuts, blueberries, chia seeds, and cacao nibs are totally optional

  1. Take the peels from the bananas and mash or cut them roughly. 
  2. Add brown sugar to bananas and puree till semi smooth
  3. Add oil & vanilla extract
  4.  For this next step we recommend using a sifter to blend all of the powdered ingredients. We didn't have one in our video and feel that it isn't necessary to create this dish. Add all dry ingredients to bowl.
  5.  Blend together with mixer, about 1 minute or so, try not to overmix
  6.  Once blended add the blueberries, nuts, and cacao nibs, and fold gently into the batter.
  7. Transfer to greased loaf pan
  8. Sprinkle with toppings of choice
  9. Place into preheated oven | 350 degree oven for 50-60 minutes, depending on the oven. 
  10. After bread is done baking allow to cool for 10-15 minutes
  11. Enjoy!
